Servings: 2 martini glasses  

Time: 15 minutes + cooling time of 4 hours 

Here’s how to make a stress-free and sugar-free dessert filled with the invigorating taste of fresh lemon juice. Dip your spoon in to unveil a smooth and creamy texture that melts on the tongue. The perfect citrus dessert for a hot summer’s day and an easy win for a dinner party. 


  • 270 ml of thick double cream 
  • 70 g of BONRAW Silver Birch Caster  
  • 75 g of fresh lemon juice 


  1. In a small saucepan, pour in 270 g of double cream and 70 g of Silver Birch Caster. Put the saucepan on low heat and stir until the Silver Birch has dissolved. 
  2. When the Silver Birch Caster has dissolved, increase the temperature, and bring the mixture to boil. 
  3. Once the mixture is boiling, turn the temperature to low and stir the mixture constantly for about 3 minutes.  
  4. After 3 minutes, remove the saucepan from the heat and gradually stir in 75 g of fresh lemon juice. Then leave the mixture to rest and cool for about 5 minutes. 
  5. Divide the mixture between two martini glasses or equivalent serving glasses. Cover the tops with clingfilm, and to prevent any bubbles from appearing, make sure the wrap touches the top of the cream.  
  6. Place the glasses into the fridge for 4 hours or until they are set.  
  7. And… decorate! Garnish them with some whipping cream, strips of lemon, or some grated lemon zest. And, voila! You have the perfect dessert for a summer dinner party!
