The new classic you’ll just keep coming back to. Citrusy, sharp, and tangy. That’ll be down to the fresh lemon juice with pops of sweet from the sprinkle of Silver Birch Granulated. To achieve the perfect fluff and texture… just add yoghurt.


  • 180 g Plain Flour
  • 3 tbsp Baking Powder
  • 1/2 tsp Salt
  • 50 g BONRAW Silver Birch Caster
  • 120 g Greek Yoghurt
  • 230 ml Milk
  • 1 tbsp Fresh Lemon Juice (+ 2tsp for topping)
  • 1 Egg
  • 1 1/2 tsp Vanilla Extract
  • 1 tbsp Vegetable Oil
  • 1 tsp BONRAW Silver Birch Granulated


  1. In a medium bowl whisk together flour, baking powder, salt and BONRAW Silver Birch Caster.
  2. In a liquid measuring cup, stir together the lemon juice and milk. Set aside while you prepare the rest of the wet ingredients.
  3. In a large bowl, combine Greek yoghurt, egg, and vanilla extract. Whisk until well combined. Whisk in the milk-lemon juice mixture until smooth.
  4. Pour the dry ingredients into the wet and, using a spoon, stir until barely combined. The batter will be very thick. Be very careful not to over stir, let stand for 5 minutes.
  5. Heat a non-stick pan over medium heat; dip a kitchen paper towel into the vegetable oil and brush the pan.
  6. Scoop 1/4 cup portions of batter onto the hot pan. Cook on the first side for 2-3 minutes, until bubbles begin to form. Flip and cook on the other side, 2-3 minutes more. Repeat the same process for the rest of the pancakes.
  7. Sprinkle some extra BONRAW Silver Birch Granulated and a squeeze of lemon and enjoy!
