Gloriously good granola! This simple breakfast combines two of our favourite things, immune-boosting Mountain Bee Pollen, and antioxidant-rich Maple Sugar. A special breakfast with fibre-filled oats and natural sweetness.

Ingredients

  • 200 g rolled oats
  • 100 g rolled oats – to grind into flour
  • 5 tbsp Organic Fine Maple Sugar
  • 4 tbsp coconut oil
  • 75 g sunflower seeds
  • 2 handful of raisins
  • 2 handful of almonds
  • 3 tbsp Organic mountain bee pollen

Instructions

  1. Preheat the oven to 160˚
  2. Gently heat 4 tbsp of coconut oil and 5 tbsp of Maple Sugar together until it becomes very fluid.
  3. Place 100g of rolled oats in a blender and grind them into flour.
  4. Mix 200g of rolled oats with your oat flour, and the coconut oil and Maple Sugar mixture.
  5. Add 75g of sunflower seeds and 75g of pumpkin seeds to your mixture.
  6. Line a baking tray with parchment paper, and then pour your granola mixture onto the tray. Don’t spread it out too evenly, as you don’t want your granola to become overly thin.
  7. Bake for 20 minutes. Then mix and spread your granola out a bit more. Bake again for 10 minutes, mix, and spread a bit more, and then bake for a final 10 minutes.
  8. Switch off the oven and leave the granola to dry inside the oven for 2 hours or so.
  9. Mix in 2 handfuls of raisins, 2 handfuls of almonds, and 3 tbsps of Organic Mountain Bee Pollen. Store in an airtight container until you’re ready to serve. This granola pairs perfectly with fresh fruit and berries.
