GOOD PROCESS: We keep it simple. Low-intensive. Low-intervention. The result celebrates origin. Quimbaya Panelero farmers harvest the sugar cane then juice it using a trapiche. Its crystallised form is panela. No bleaching. No goodness-stripping factories. Panela is a way of life.
