How is panela sugar made?

Panela has been traditionally handmade for centuries by dehydrating raw sugarcane juice over a low heat until it is a thick syrup, then cooling the syrup into bricks. The low heat fires are fuelled by sugarcane stalks that are dried in the sun after harvesting and pressing, making it a very sustainable process.

Is panela same as jaggery?

Panela from Central and South America; made from sugarcane; ranges from toffee to dark-roux colouring. Jaggery from India; usually made from sugarcane but sometimes made from date palms; ranges from tan to chocolate colouring. The two sugars have very different taste profiles.

When and how should I use Panela?

You can switch out most light-medium brown sugars for Panela and get excellent results. In fact, you can also lose the need for extracts and essences in baking, as the Panela provides a beautifully full-bodied caramel taste. It also makes a great flavour enhancer in cooking and for use in cocktails.

Kinder to the planet too.

I really liked the Bonraw products I've tried. The panela is a great replacement for brown sugar in baking and I love that the products are kinder to the planet too.
