This dessert is everything; crumbly Lotus Biscoff, creamy caramel, apple pie, smooth cheesecake filling, crunchy pecans, finished off with a cool whipping cream. Need we say more?
Ingredients for crust crumble:
-115 g unsalted butter
-133 g Organic Coconut Blossom Sugar
-1 pack of Lotus Biscoff Biscuits
-2 tsp of ground cinnamon
Ingredients for caramel apple cheesecake filling:
-227 g cream cheese
-112 g caramel topping sauce
-½ tbsp vanilla extract
-1 tsp ground cinnamon
-½ tsp ground ginger
-½ tsp ground nutmeg
-¼ tsp salt
-1 can of apple pie filling
Other ingredients for parfait:
-1 tub whipping cream
-200 g chopped pecans
-Extra caramel topping sauce for drizzling
Method:
- To begin, place 115 g of unsalted butter, 133 g of Organic Coconut Blossom Sugar, Biscoff biscuits, and 2 tsp of ground cinnamon into a food processor.
- Pulse these ingredients together until a fine crumble starts to form.
- Set your crumble aside and begin working on your caramel apple filling.
- Place 227g of cream cheese, 112 g of caramel topping sauce, ½ tbsp vanilla extract, 1 tsp of ground cinnamon, ½ tsp ground ginger, ½ tsp ground nutmeg, ¼ tsp salt into a bowl and beat until smooth.
- Stir in the apple pie filling, and then set aside.
- Prepare your parfait by placing 2 spoonfuls of your Biscoff crumb in the bottom of an old-fashioned cocktail glass, then place 2 spoonfuls of caramel apple filling on top, 2 scoops of chopped pecans, and then finally 2 scoops of whipping cream.
- Repeat the process to fill the glass and then finish with a drizzle of caramel sauce.
- Chill in the fridge until you are ready to serve and enjoy!
