Delve into this quick & easy vegan and sugar-free strawberry mousse crunch. Naturally sweetened by a puree of fresh strawberries and BONRAW Silver Birch Icing.

Time: 25 minutes

Serves: 4

  • 14 strawberries
  • 50 g of Silver Birch Icing
  • 2 tbsp Low-Sugar Granola
  • 125 ml of Plant-based Cream


  1. Slice and hull 12 strawberries.
  2. Sift 50 g of Silver Birch Icing.
  3. Place the strawberries and Silver Birch Icing into a blender to create a puree. Set aside.
  4. In a chilled bowl add your vegan cream and beat until stiff peaks begin to form, and then fold in the puree.
  5. Prepare 4 small/medium glasses, add 1 tbsp of Lizi’s granola to the bottom of each glass. Divide your mousse between the glasses and top them with a handful of Lizi’s granola.
  6. Garnish with your two remaining strawberries, hulled.

And ta-da! You can use this as a healthier and vegan alternative to ice cream.
